WEEKEND Gingerbread French Toast
This is one of my favorites!
Ingredients:
2 slices whole wheat cinnamon raisin toast
2 eggs
1/4 tsp ginger
1/4 tsp all spice
1/4 tsp maple extract
1 tsp maple syrup, stevia or splenda

Whisk the eggs, spices and sweeteners together and let the bread soak in the bread for 5-10 minutes.
I use an oil spray to coat the pan before frying, but coconut oil is a great substitute as well.
Cook until both sides are lightly brown, if there is egg left over, scramble it and have it on the side!
